Scientists from the National Institute of nutrition Denmark conducted a series of comparative studies. The subject of the study was the presence of contaminants, such as arsenic, acrylamide, lead, cadmium, and polychlorinated biphenyls and dioxins in ordinary foods consumed daily. For comparison were taken from the results of 2004 and 2011.
As a result, in 2011, the level of harmful substances in food in General has decreased, but the risk of harm to the human body when consumed remains.
For example, acrylamide contributes to cancer development in the use of the lowest dose of trace elements. The connection is formed in the roasting carbohydrate foods at temperatures above 120 degrees. Thus, when eating standard food portion, with the content of starches person absorbs 16 milligrams of acrylamide, which is higher than the average rate many times.
To avoid increasing the level of acrylamide in food scientists advise to cook at a temperature of 175 degrees. The most popular products which contain high doses of harmful substances are:
1. Adults - coffee - 30%; bread - 13%; potatoes - the highest number, the exact figure is not known
2. Children - potatoes - 43%; chips and chocolate - 20%; bread - 16%
