Fructose cannot be considered a safe alternative to sugars. Researchers from the University of California have found that eating large amounts of fructose alters the activity of a number of genes. The researchers analyzed 900 genes. The activity of two of them changed under the influence of fructose. Genes Bgn and Fmod can start chain reactions, thrilling hundreds of other genes.
