Eggs increase the benefits of vegetables – study

Experts from Purdue University proved: vegetable salad becomes more useful if you add a few eggs. Carotenoids that are included in vegetables are better absorbed together with the protein of eggs. It is reported Zee News.

I eggs contain a lot of amino acids, fatty acids and vitamins. They make this product almost indispensable. In total the study involved 16 volunteers. People suggested to eat a salad without eggs, with 1.5 or 3 eggs.

In each salad scientists added 3 grams of canola oil. The presence of eggs increased the absorption of carotenoids in the intestinal tract of volunteers in 3.8 times. This indicates a definite benefit of combining plant foods with eggs.
